Les recherches sur le fromage et les produits laitiers dans l’Italie préromaine sont peu nombreuses. Il est pourtant incontestable que les produits laitiers composaient une part importante de l’alimentation des habitants de la péninsule italienne avant l’époque romaine. L’importance accordée au lait est d’ailleurs confirmée par l’existence d’une documentation iconographique qui prouve un attachement aux aspects symboliques liés à l’allaitement humain et animal. Ce sujet d’étude est donc prometteur : les sources existent, mais elles n’ont pas été systématiquement collectées. En l’absence de texte sur le sujet, il faut analyser un corpus constitué de témoignages iconographiques et archéologiques. Dans cet article, nous présentons un état des lieux des sources qui embrasse l’ensemble de la chaîne de production des produits laitiers, et qui s’intéresse aussi aux pratiques alimentaires.

Research on cheese and dairy products in pre-Roman Italy is scarce. However, it is undeniable that dairy products were an important part of the diet of the inhabitants of the Italian peninsula before the Roman period. The importance given to milk is confirmed by the existence of iconographic documentation that proves an attachment to the symbolic aspects related to human and animal feeding. This subject of study is therefore promising: the sources exist, but they have not been systematically collected. In the absence of a text on the subject, it is necessary to analyse a corpus constituted of iconographic and archaeological testimonies. Thus, in this article, we present an inventory of the sources that embrace the entire production chain of dairy products, which also focuses on food practices.
