How is an activity that deviates from the dominant agri-food system place-based in a specialized region? Studying the case of dairy sheep breeding and the making of farmhouse cheeses in the Region South, we show that the margins generated by specializations offer an opportunity for the alternative activity to develop, based on an assertive of farmhouse production. The business is subject to a dual phenomenon of path-dependency to dominant territorial systems and transgression, expressed in the qualification of livestock products and the commercial, social and professional networks of the farmers.
