xivth and xvth century wills from the Forez region, the vast majority of them drawn up for farmers and rural craftsmen, enable us to hear the voice of the cattle breeders of the area. The habitual recourse to vaccas dotales testifies to the importance of cattle breeding in the Monts du Forez; testators frequently specified the name and even the color of their cows. The habit of placing part of the family’s livestock in someone else’s custody (livestock lease) was widespread at all levels of society. The menus for funeral feasts and the alimony benefits granted to widows prove the important place of beef and pork in local eating habits and confirm that cattle breeding was universal, even more so than in the nearby Lyonnais region.
