While the Limousin region is often described as poor, isolated, and archaic, it has long been a land marked by cattle breeding, which evolved at a very early date toward the trading of oxen, destined particularly for Paris. Favorable environmental characteristics, the use of plentiful and low-cost local production such as hay, turnips, and chestnuts, and the fattening of oxen during the winter made it possible to supply fattened animals to the Paris market at a time of the year during which other provinces such as Normandy could offer this only in limited numbers. This shows that the Limousin region has long been integrated into the national market.
