This articles focuses on relationship between the municipal government of a Parisian suburb and the main producers of filo pastry in France. In the municipal authorities’ discourse, the business is identified as “ethnic ” and viewed as a way to revive the market and a sign of urban modernity. The author traces the socio-historical background (the trajectory of the municipal authority, the entrepreneurs and the product) to see under what conditions commercial “otherness ” can be thought of as a resource for action and for the municipal narrative.
