Summary, etc. À partir des années 1950, à l’instar du modèle agricole, le système d’abattage des animaux d’élevage s’est progressivement industrialisé, dans un processus de privatisation, de concentration et d’une rationalisation productiviste du travail. En marge de cette dynamique, de petits abattoirs de proximité ont été repris par des collectifs d’éleveurs afin d’en assurer le maintien, la gestion et la mise en service. Ces expériences méconnues sont source d’inspiration et d’essaimage aujourd’hui, au regard de l’aspiration des réseaux paysans et des consommateurs, à développer des alternatives à l’abattage industriel ainsi qu’une alimentation de proximité. À partir d’une recherche ethnologique dans un abattoir paysan des Hautes-Alpes, cet article montre comment le commun qui s’y déploie recadre par le bas le référentiel industriel de l’abattage, en modifiant les finalités et les normes de ce système dominant.

Summary, etc. From the 1950s, the system of slaughtering livestock gradually became industrialized, following the agricultural model, through a process of privatization, concentration and productivist rationalization of work. However, in the margins, some small and local slaughterhouses at risk of closure have been taken over by farmer collectives, in order to ensure continued investment, maintenance and use. Today, these little-known success stories are becoming a source of inspiration and a model for new initiatives, in the context of farming and consumer networks seeking to develop alternatives to industrial slaughter as well as locally based food systems. Based on an ethnographic research in a farmer-run slaughterhouse in the Alps, this article shows how the collective nature of the labour in this abattoir reframes the industrial model of slaughter, modifying the aims and the norms of this dominant and controversial system.
