The author then observes that relocalization is not the most effective strategy for reducing greenhouse gas emissions, nor is it a particularly powerful economic lever for sustaining agriculture or regional development. Finally, he underscores the organizational shifts needed to make local procurement effective, highlighting the risk of an uneven distribution of responsibilities when it comes to managing relationships between local farmers and catering services. After detailing these three main challenges, he closes with three key recommendations. |

Summary, etc. | En s’appuyant sur une revue de la littérature et sur ses activités d’enseignement et de recherche, l’auteur engage un débat sur le « pourquoi » et le « comment » de l’approvisionnent local de la restauration collective. Il défend tout d’abord qu’il ne faut pas considérer la relocalisation comme une fin en soi mais comme un moyen au service d’autres finalités. Il rappelle ensuite que la relocalisation n’est pas le meilleur moyen pour réduire les émissions de gaz à effet de serre et explique qu’elle est une politique de faible poids pour soutenir économiquement l’agriculture et le territoire. Il souligne enfin l’importance des réorganisations nécessaires à la relocalisation et signale le risque que la charge de la médiation marchande entre les agriculteurs locaux et la restauration collective soit inégalement répartie. A la suite de la description de ces trois écueils, il conclut par trois préconisations. |
