| Summary, etc. | Using the potato supply chain as a case study, this article analyzes the interdependencies between farming practices and the practices of supermarkets. Three market devices are examined: central purchasing bodies, specifications, and the approval process. These three market mechanisms, which ensure compliance with the commercial standards set by supermarket operators, represent a set of constraints imposed on farmers, making the use of pesticides a requirement for participation in the commercial arena. Pesticides as such can thus be analyzed as market device enabling mass retailers to ensure the stability of their supplies, their commercial relations and their hegemonic position within the supply chain. | Summary, etc. | Ancré dans une sociologie des marchés, cet article propose à partir du cas de la filière pomme de terre d’analyser les relations d’interdépendance entre pratiques agricoles et commercialisation en grandes et moyennes surfaces. Trois dispositifs de marché au service de l’approvisionnement de la grande distribution sont étudiés : les centrales d’achats, les cahiers des charges et les étapes d’agréage. Ces trois dispositifs de marché, garants du respect des normes commerciales élaborées par les acteurs de la grande distribution, représentent un faisceau de contraintes imposées aux agriculteurs, faisant du recours aux pesticides un présupposé pour participer à la scène marchande. Les pesticides en tant que tels peuvent ainsi être analysés comme des dispositifs de marché permettant aux acteurs de la grande distribution d’assurer la stabilité de leur approvisionnement, de leurs relations commerciales mais aussi de leur position hégémonique au sein de la filière. |
