Summary, etc. | Interest in adopting sustainable and responsible practices within organizations has grown considerably in recent years, due to environmental changes and stakeholder pressures. The agri-food sector is particularly impacted by these issues, due to resource depletion and worsening climatic conditions. With the global population rising, there is a real risk that we will be unable to feed the entire population in the future, even as food loss and waste continues to increase. Today, we need to propose and develop new models to curb this phenomenon. This study focuses on the bulk distribution model and its ability to reduce food waste and packaging waste. Based on a case study, we highlight the issues and constraints associated with this distribution model, while presenting various forms of innovation related to this approach. This study contributes to sustainability research by focusing on food waste and exploring the potential of bulk distribution to reduce it. It also provides indications on how innovations can be implemented in a responsible and sustainable way. |

Summary, etc. | L'intérêt pour l'adoption de pratiques durables et responsables dans les organisations s’est considérablement accru au cours des dernières années en raison des changements environnementaux et des pressions des parties prenantes. Le secteur agroalimentaire est particulièrement concerné du fait de l’épuisement des ressources et de la dégradation des conditions climatiques. Face à l’accroissement de la population mondiale, le risque de ne pas pouvoir nourrir toute la population dans l’avenir est réel alors que parallèlement les pertes et gaspillages alimentaires ne cessent d’augmenter. Oujourd’hui, il devient nécessaire de proposer et développer de nouveaux modèles pour endiguer ce phénomène. En nous appuyant sur une étude de cas, nous mettons en évidence les enjeux et les contraintes liés au mode de distribution en vrac, à sa capacité à réduire le gaspillage alimentaire et les déchets issus de l’emballage, tout en présentant différentes formes d’innovations. Cette étude contribue à la recherche sur la durabilité et fournit également des indications sur la manière dont les innovations peuvent être réalisées dans une logique responsable et durable. |
