| Summary, etc. | RésuméLa stature moyenne des populations humaines constitue ce que l’on nomme un niveau de vie biologique, un indice de nutrition nette ou encore un indice de malnutrition chronique. L’exploitation de 61 334 dossiers individuels de conscrits du Limousin nés entre 1782 et 1920 et des mercuriales de Haute-Vienne permet de cerner la géographie et la chronologie des changements agricoles et leurs conséquences nutritionnelles sur les hommes et le bétail. À une première phase d’érosion des niveaux de vie (conscrits nés en 1782-1851) succède une longue période de croissance de la taille des hommes (conscrits nés en 1851-1920) et du poids des bovins. C’est à partir du milieu du xixe siècle que le Limousin archaïque, région d’élevage, rattrape de façon progressive la moyenne nationale. |

| Summary, etc. | The average height of human populations is here considered as a biological standard of living, also called index of net nutrition or index of chronic malnutrition. The processing of 61 334 individual data of conscripts born in Limousin between 1782 and 1920 and of the market price lists of the Haute-Vienne département allows us to determine the geography and chronology of agricultural changes and their nutritional consequences on men and cattle health. After a first phase of erosion of the biological standard of living (conscripts born between 1782 and 1851), there was a long period of increase of human height and of cattle weight (conscripts born between 1851 and 1920). From the middle of the 19th century onwards, the Limousin, an archaic cattle-raising region, catched up with this of the national average. |
