| Summary, etc. | Les pratiques alimentaires se modifient au fil du vieillissement. Parmi les nombreux facteurs qui peuvent rendre compte de ces modifications (transformations physiologiques, dégradation de l’état de santé, etc.) nous insistons ici sur les effets de la dépendance culinaire conduisant des personnes âgées ne pouvant plus assurer approvisionnement et/ou préparation des repas à les déléguer à un tiers. On distingue différentes configurations selon les liens entre aidé et aidant: conjoint, enfant, professionnel. L’analyse se base sur une enquête effectuée en 2001 par questionnaire auprès de personnes âgées de 60 ans et plus (N=800) et sur une cinquantaine d’entretiens effectués en 2006 auprès de personnes de 70 à 90 ans vivant à domicile. Les résultats statistiques montrent que la délégation du ravitaillement, totale ou partielle, augmente avec l’âge et s’exerce de plus en plus hors du cercle du ménage et de la parenté. Il s’ensuit une moindre maîtrise du choix des produits par les personnes concernées, et leur alimentation s’en trouve modifiée. Ce constat nous amène à approfondir, viades études de cas, l’impact de l’organisation domestique sur l’alimentation et à examiner de plus près la délégation de tout ou partie de la chaîne culinaire. L’analyse montre notamment que la dépendance culinaire conduit à une redéfinition des rôles conjugaux (variable selon le type d’incapacité et le sexe du dépendant) et à la nécessité dans certaines situations du recours à un tiers non conjugal (enfant, professionnel). Le sexe et le statut de l’aidant (mari/épouse; fils/fille; professionnel) et la relation entre l’aidant et la personne âgée dépendante jouent de manière centrale dans le maintien ou non des habitudes alimentaires, au regard notamment du rôle crucial de la décision féminine en matière de contenu des approvisionnements et des menus. |

| Summary, etc. | Elderly People and Dependency on Others for Food Preparation: Between Delegation and Replacement Eating habits change with old age. Of the many factors behind these changes (physiological changes, a deterioration in health, etc.), this paper stresses the effects of dependency that causes elderly people who can no longer shop and cook for themselves to delegate those tasks to other people. Different configurations are identified depending on the relationship between the dependent and the carer: spouse, child or professional. The analysis is based on a survey of people aged 60 and over (N=800) conducted by questionnaire in 2001 and on around 50 interviews of people aged between 70 and 90 living at home conducted in 2006. The statistical results show that delegation of all or some shopping increases with age and is increasingly delegated outside the household and family circle. Consequently, the people concerned have less control over the choice of products, and their diet changes as a result. Case studies are then used to investigate the impact of household organisation on diet and to examine more closely the delegation of the whole or part of the food preparation chain. The analysis shows that dependency on others for cooking leads to a redefinition of marital roles (variable depending on the type of incapacity and gender of the dependent) and to the need in some situations to rely on someone other than the spouse (a child or a professional). The gender and status of the carer (husband/wife; son/daughter; professional) and the relationship between the carer and the dependent elderly person are crucial to whether or not eating habits are maintained, especially given the pivotal role of women in decisions about the content of shopping and meals. |
