Summary, etc. L’élevage des coquillages dans l’Antiquité est communément admis dans la littérature archéologique. Toutefois, il n’a jamais été précisément défini par rapport aux conchylicultures de nos sociétés modernes. L’article étudie donc cette question en utilisant les observations réalisées sur les coquilles marines découvertes sur les sites de Gaule romaine. Les restes archéologiques d’huîtres plates et de moules et les sources antiques sont utilisés pour tenter de retrouver les étapes des pratiques ostréicoles et mytilicoles contemporaines. Une synthèse est également proposée sur l’intérêt et l’utilité d’une conchyliculture durant l’époque romaine.

Summary, etc. Shellfish farming in Roman times?Shellfish breeding in antiquity is commonly accepted in archaeological literature. However, it has never been precisely defined by comparison with modern shellfish farming. This study takes up this question by using observations about shells discovered in Roman Gaul. It focuses on remains of flat oysters and mussels and on classical texts to recover the stages of oyster and mussel farming practices. It also proposes conclusions about the interest and usefulness of shellfish breeding during the Roman period.
