| Summary, etc. | La restauration ne fait pas exception dans le domaine de la prévention des risques sanitaires. Elle connaît depuis les années 1990 une rationalisation de ses dispositifs sociotechniques de contrôle pour garantir une plus grande sécurité aux consommateurs. Si l’État a encouragé la standardisation des pratiques d’inspections des restaurants, en les adossant à des méthodes plus techniques et scientifiques, l’autonomie des inspecteurs – leur capacité à évaluer, en situation, la « bonne manière » de contrôler – n’est pas annulée face aux aléas (humains, financiers et techniques) qui se présentent à eux. Les inspecteurs déploient un sens de la justice, tenant compte d’inégalités entre restaurateurs, qui résiste non seulement à son évacuation dans le dispositif de travail et à la standardisation de l’inspection. L’article souligne alors que l’État, en contraignant davantage l’autonomie professionnelle des inspecteurs, a paradoxalement atténué l’idéal de standardisation et de prévention du risque sanitaire qu’il souhaitait renforcer. |

| Summary, etc. | In the field of health risk prevention, catering is no exception. Since the 1990s, the sociotechnical devices used to control catering have been rationalised to guarantee the greater safety of consumers. The State has pushed for a standardisation of food inspection’s practices and introduced technical and scientific methods. However, this article shows that the autonomy of inspectors abides. They remain able to assess, in social situations, what a “proper” control is. By taking inequalities between restaurant owners into consideration, inspectors develop a sense of justice which resists not only to its evacuation from the work organisation, but also to the standardisation of inspection. This sense of justice is prompted by human, financial and technical resistances. The article then argues that the State, by further restricting the professional autonomy of inspectors, has paradoxically depleted the ideal of health risk prevention and standardisation that it had wished to reinforce. |
