Summary, etc. RésuméAlors que le Limousin est souvent décrit comme un pays pauvre, isolé et archaïque, c’est depuis longtemps une terre d’élevage, qui s’est orientée précocement vers la commercialisation de bœufs gras, destinés surtout à la capitale. L’exploitation judicieuse des caractéristiques naturelles, des produits locaux abondants et de faible coût – foin, raves, châtaignes – l’irrigation des prés de fauche et l’engraissement des bœufs de pouture à l’étable l’hiver, ont permis de fournir des animaux gras au marché parisien au moment de l’année où les autres provinces comme la Normandie ne l’approvisionnent que faiblement. De ce fait le Limousin est inséré depuis longtemps dans le marché national.

Summary, etc. While Limousin is often described as a poor country, isolated and archaic, since a long time it is a land of cattle breeding, which turned at a very early date to the trading of oxen, particularly destined to the capital. The favourable environmental characteristics, the use of local produce, both plentiful and low-cost, suche as hay, turnips and chestnuts and the fattening of the oxen during winter, permitted to supply fat animals to the Parisian market at a period of the year during which other provinces as Normandy can offer it only a very limited number of animals. All this show that Limousin is integrated since a long time into the national market.
