| Summary, etc. | RésuméAu xixe siècle, la place de l’élevage dans l’économie agricole du Maine-et-Loire est contrastée. Dans l’ouest bocager, la densité du bétail est élevée ; l’élevage et l’engraissement des bovins sont des activités essentielles des métairies. Dans l’est, les densités et l’importance économique du bétail sont plus faibles, surtout dans le Saumurois. Au cours du siècle, le développement des cultures fourragères et la transformation des assolements permettent un accroissement de la quantité de bétail et une amélioration de ses qualités. L’usage des chevaux pour les travaux agricoles se développe alors que l’engraissement des bœufs et des vaches prend une grande extension. Cependant, l’élevage progresse surtout là où il jouait déjà par le passé un rôle important et les contrastes demeurent. |

| Summary, etc. | In the xixth century, the importance of cattle-raising in the farming economy of Maine-et-Loire was highly uneven. In the bocage to the West, cattle density was high, and the raising and fattening of cattle was a core activity of sharecroppers. In the East, both the density of cattle and its economic role are less significant, especially in the Saumur area. As the century went by, the development of fodder plants and the transformation of crop rotation allowed for a higher number of cattle heads and improved stock quality. Horses were increasingly used for agricultural work, while the fatteining of beef and cows spread considerably. However, cattle-raising increased mostly in areas were its past role had already been significant, and the basic contrasts were not erased. |
