| Summary, etc. | RésuméL’existence d’une importante boucherie rurale est attestée, dans la Normandie du xviiie siècle, tant par les sources fiscales que par celles émanant des hautes justices. Les maîtres bouchers autorisés à exercer leur activité derrière les étals de près de deux cents bourgs, les jours de marché surtout, sont, comme les simples bouchers de campagne, mais selon des modalités différentes, soumis à une fiscalité spécifique : les droits d’inspecteurs des boucheries institués en 1704. Les déclarations passées par les bouchers et les procédures réprimant leurs fraudes témoignent d’une consommation de viande de boucherie affectée de mouvements saisonniers, avec un déficit de printemps marqué, mais, au total, bien supérieure à ce qui est généralement admis pour les populations rurales d’Ancien Régime. |

| Summary, etc. | Oth fiscal sources and high justice testimonies reveal that rural butchering was a significant activity in xviiith century Normandy. Master butchers were licensed to set up their stalls in nearly two hundred towns, especially on market days. Just as common coutry butchers, but according to different rules, they were subject to a specific taxation, the butchering inspection rights, instituted in 1704. The testimonies of butchers and the proceedings against their frauds show that butchered meat consumption followed seasonal cycles, with a marked deficit in the spring, and reached levels well above what is commonly assumed for rural populations under the Old Regime. |
