| Summary, etc. | At the end of the XIXth and the beginning of the XXth century, French and Chinese restaurants in San Francisco reached out to people of different backgrounds, to maximize their clientele. In colonial Saigon, Chinese restaurants similarly attracted multicultural patrons, whereas French restaurants passed up opportunities to win Asian customers, instead creating exclusive dining environments for the French. San Francisco’s reputation as a great restaurant city grew in part from its residents’ openness to trying new cuisines. |
