Summary, etc. Avec la progression de la consommation de lait à la fin du xviiie siècle, Paris devient soudainement le lieu d’un élevage urbain, autant inédit que singulier. Alors que seulement quelques centaines de vaches laitières étaient présentes sur les franges des faubourgs avant la Révolution française, elles se comptent par milliers en 1800, environ 5 000 dans le tissu urbain. À partir de 1789- 1791, l’abolition des enquêtes préventives des nuisances autant que la liberté d’entreprendre concourent, avec l’irrésistible augmentation de la consommation de lait, à rendre durable cette présence. Néanmoins, la concentration du bétail dans des étables improvisées entraîne des risques d’épizooties et devient un facteur d’insalubrité pour le voisinage. Dès 1802, les autorités s’attachent à dégager le centre-ville de ces étables, sans remettre en cause le nouveau fonctionnement de production de lait dans ses principes, dont le principal est la stabulation fixe annuelle.

Summary, etc. The rise in milk consumption in the late 18th century led to a sudden and unprecedented increase in livestock farming in Paris. Before the French Revolution there had been only a few hundred dairy cows in the outer suburbs, but by 1800 there were about 5000 in the urban environment. As of 1789-1791, the abolition of inquiries to prevent disturbances, freedom of enterprise, and the inexorable rise in milk consumption caused urban dairy farming to establish a foothold. Nevertheless, the concentration of livestock in makeshift cowsheds led to risks of epizootic disease and posed health threats to the neighborhood. From 1802 onwards, the authorities set about clearing the city center of these cowsheds, without calling into question the new principles of milk production, now based on fixed annual stabling.
