Summary, etc. Using information gathered from an archeological dig and from archival studies, this paper follows the growth of a major millstone quarry, the stones of which were exported throughout the Dauphiné province during the 17th and 18th centuries. The development of this industry testifies to the increasing need of millers and consumers for better flour, and reveals a significant improvement in bread quality.
