| Summary, etc. | Au début du xve siècle, Foulques Painel est seigneur de la baronnie de Hambye. Du château féodal, dont les dernières tours furent détruites en 1825-1830, nous n’avons plus que des dessins. En revanche Jehan Félière, l’intendant de Foulques, a laissé un livre de comptes, qui d’octobre 1407 à la saint Michel 1415 recense tous les revenus et toutes les dépenses du château. Les comptes de cuisine y tiennent une grande place et le manuscrit rend compte avec exactitude des travaux relatifs au jardin et des habitudes alimentaires de Foulques, de sa famille et de sa parentèle. Le texte recense aussi avec précision les légumes, viandes ou boissons qui se consomment au début du xve siècle et fait aussi allusion au commerce qu’il s’en fait. A la fin du Moyen Âge le livre de compte de Jacques d’Argennes (1484) révèle des changements significatifs des habitudes alimentaires. Enfin la correspondance d’Adrienne d’Estouteville en 1536-1541 évoque la passion nouvelle des melons et des courges. |

| Summary, etc. | The manorial vegetable garden of HambyeAt the beginning of the 15th century, Foulques Painel was lord of Hambye, a medieval castle. The last fortifications were destroyed between 1825 and 1830 leaving few relics. But, the estate manager, Jehan Félière, left an account book covering the years from October 1407 to 29 September 1415 which lists all revenues and expenses. Kitchen accounts occupy a major place and the manuscript gives important information on gardening and the diet of the Foulques family. Trade and consumption of vegetables, meat and fish are meticulously described. Thanks to Jacques d’Argennes accounts (1484) we know that significant changes in diet were occurring and Adrienne d’Estouville’s correspondence (1536-1541) notes the new craze for melons and gourds. |
