| Summary, etc. | RésuméPour les xive et xve siècles, les testaments du Forez, qui émanent surtout de paysans et d’artisans ruraux, témoignent, avec la coutume des vaccas dotales de l’importance de l’élevage bovin : le testateur indique volontiers le nom de ses vaches, voire leur couleur. L’usage de placer une partie du cheptel familial chez autrui, en « commande » (bail à cheptel) ou autrement, est largement répandu. Le menu des repas d’enterrement et la pension viagère accordée à la veuve montrent une importante consommation de viande porcine ou bovine et confirment que l’élevage, encore plus nettement qu’en Lyonnais, y est omniprésent. |

| Summary, etc. | xivth and xvth century wills from the Forez region, the vast majority of them drawn up for farmers and rural craftsmen, enable us to hear the voice of the cattle breeders of the area. The habitual recourse to vaccas dotales testifies to the importance of cattle breeding in the Monts du Forez ; testators frequently specified the name and even the color of their cows. The habit of placing part of the family’s livestock in someone else’s custody (livestock lease) was widespread at all levels of society. The menus for funeral feasts and the alimony benefits granted to widows prove the important place of beef and pork in local eating habits and confirm that cattle breeding was universal, even more so than in the nearby Lyonnais region. |
