| Summary, etc. | From the spring of 1793 to the winter of 1795, Parisian bakers took skillful advantage of their favorable position on the labor market. This was due not only to military commitments and intra-sector competition, but also to voluntary inactivity. These various factors help to raise the stakes, adding a “fake shortage” to the “real” lack of manpower. This category, therefore, benefited from high wages. And the regulations established by the Commune and the sectional authorities did not profoundly alter the balance of power neither the fixing of a holiday period, nor the obligation of a holiday note, combined with their entry in a book, nor the requisitioning of bakers helped to alter the balance of power, despite the threat of being arrested as a suspect. Faced with a shortage of manpower, and insofar as boys adjust their conduct, these measures proved to be at least partly ineffective. |

| Summary, etc. | Du printemps 1793 à l’hiver 1795, les garçons boulangers parisiens ont su profiter très habilement de leur position favorable sur le marché du travail. Celle-ci est non seulement le fruit des engagements militaires, du jeu sur la concurrence intrasectorielle, mais aussi de l’inactivité volontaire. Ces différents facteurs contribuent à faire monter les enchères en ajoutant une « disette factice » au manque « réel » de bras. Cette catégorie bénéficie dès lors de rémunérations élevées. Et les régulations mises en place par la Commune et les autorités sectionnaires ne modifient pas profondément le rapport de force : ni la fixation d’une période de congé, ni l’obligation du billet de congé, associée à leur inscription sur un livre, ni la mise en réquisition des garçons n’ont permis de modifier le rapport de force, malgré la menace d’être arrêté comme suspect. Face à un déficit de main-d’œuvre et dans la mesure où les garçons ajustent leurs comportements, ces mesures se révèlent au moins en partie inefficaces. |
