Summary, etc. | Dans le cadre de cette contribution, la perte ou le renoncement aux étoiles du Guide Michelin de 19 chefs sont étudiés à partir d’un corpus médiatique issu de la presse nationale ou de la presse régionale entre 1996 et 2019. L’analyse des discours tend à souligner les tensions qui traversent la restauration gastronomique et interroge également les modalités d’évaluation et de communication. Ce travail permet plus largement d’interroger la place et la nature de la critique gastronomique dans une ère de la transparence. |

Summary, etc. | In the context of this contribution, the loss or renunciation of the Michelin Guide stars of 19 chefs are studied through a media corpus from the national press or the regional press between 1996 and 2019. The analysis of such discourses highlights the tensions that affect gastronomic catering and also questions the methods of evaluation and communication. This work makes it possible more broadly to question the place and nature of gastronomic criticism in an era of transparency. |

Summary, etc. | En el contexto de este artículo, la pérdida o renuncia de las estrellas de la Guía Michelin de 19 chefs se estudia desde un corpus mediático de la prensa nacional y regional francesa entre 1996 y 2019. El análisis de los discursos tiende a subrayar las tensiones que atraviesan la restauración gastronómica y también a cuestionar los métodos de evaluación y comunicación. Este trabajo permite analizar de manera más amplia el lugar y la naturaleza de la crítica gastronómica en una era de transparencia. |
