| Summary, etc. | Cet article aborde la controverse sur le Nutri-Score, de son élaboration à sa mise en oeuvre, en montrant comment elle est survenue et comment elle oppose acteurs publics et privés dans le secteur agroalimentaire. Il analyse les conditions dans lesquelles le ministère de la Santé a suscité une expérimentation en conditions réelles d’achat, avec un nouveau ressort cognitif, pour dépolariser cette controverse et légitimer le choix de ce logo. La notion de motif cognitif, comme la bataille du Nutri-Score dont l’objet même est cognitif, offrent ici une occasion remarquable de saisir avec précision les connaissances mobilisées dans le cours de l’action et leur rôle : le logo coloriel, d’emblée conçu pour agréger des connaissances et des informations, organisées de manière bien définie et selon des principes explicites revendiquant un fondement scientifique, vise à produire des conclusions fondées et à favoriser, sur ces bases, des comportements d’achat et des effets plus larges, à l’échelle de filières alimentaires tout entières. |

| Summary, etc. | This article looks at the controversy surrounding the Nutri-Score, from its development to its implementation, showing how it came about and how it created opposition between public and private actors in the food sector. It analyzes the conditions under which the Ministry of Health encouraged experiments in real-world shopping conditions, using a new “cognitive motif” to defuse the controversy and legitimize the choice of this label. The notion of cognitive motif, like the battle over the Nutri-Score whose very aim is cognitive, offers an important opportunity to identify with precision the knowledge that was mobilized and the role it played. The colored label was, from the outset, designed to aggregate knowledge and information, organized in a well-defined manner and according to explicit principles claiming scientific grounding, with a view to producing well-founded conclusions and, on that basis, to promoting certain purchasing behaviors and producing broader effects at the level of the food industry as a whole. |
