Summary, etc. | Cet article vise à mieux comprendre les raisons de la stagnation des ventes des fromages AOP d’Auvergne, malgré les efforts importants consentis par les producteurs. Il se focalise sur les facteurs liés aux perceptions des produits de la part des consommateurs et des vendeurs, à partir d’enquêtes de terrain menées dans différentes régions auprès des distributeurs. L’analyse des résultats de ces enquêtes à la lumière des données de prix et volume permet de corroborer l’hypothèse selon laquelle les AOP fromagères d’Auvergne sont « piégées » dans une situation de réputation de produits de faible qualité. Ces résultats suggèrent qu’une meilleure communication dans l’ensemble de la filière permettrait à l’ensemble des acteurs de bénéficier de marges supérieures. |

Summary, etc. | This article aims to better understand the reasons for the poor sales performance of PDO cheeses from the Auvergne region, in spite of the considerable efforts of the producers. It focuses on factors linked to the perception of products on behalf of consumers and retailers, based on surveys with retailers undertaken in various regions. The analysis of the results of this fieldwork confirms the hypothesis that Auvergne PDO cheesemakers are “trapped” in their reputation for low-quality products. These results suggest that better communication throughout the supply chain, from farm to shop, would allow all actors to benefit from better margins. |
