Summary, etc. | À partir de l’étude de trois restaurants situés dans le centre, le nord et le sud de l’Italie, cet article s’intéresse aux relations entre le mouvement Slow Food et le monde de la restauration, en mettant en lumière les diverses formes possibles d’engagement de la part de restaurateurs impliqués. Né en Italie dans les années 1980, Slow Food est aujourd’hui un mouvement international présent dans les grands débats concernant les problématiques alimentaires. Les restaurateurs qui, dès le départ, ont constitué une base forte de soutien au mouvement, changent aussi leurs formes d’adhésion par pragmatisme. L’analyse porte sur l’articulation entre les aspects économiques, les enjeux politiques et les modes de construction de la confiance. |

Restaurants and Chefs in the Slow Food Movement in ItalyThe article examines relations between Slow Food and the world of restaurants through a study of three locales located in the Centre, North and South of Italy. It sheds light on the various possible forms of involvement of restaurateurs linked to the movement. Having emerged in Italy in the 1980s, Slow Food is today an international movement taking part in the big debates around food problematics. Restaurant owners who, right from the start, provided a strong support to the movement have also changed their forms of adherence, which are nonetheless always pragmatic. The analysis focuses on the articulation between the economic aspects, political stakes and modes of construction of trust. |

Summary, etc. | Die Slow Food Bewegung ist aufgrund ihrer Standpunkte zu den Themen Konsum, Umgang mit der Natur und Rechte der kleinen Produzenten in der Ernährungsdebatte zu einem angesehenen Interessenvertreter avanciert. Dabei ist zu beobachten, dass der Gastronomie, die die Bewegung in ihren Anfängen sehr stark unterstützte in der heutigen Slow Food Philosophie weniger Bedeutung beigemessen wird. Der Artikel beschäftigt sich mit der Weiterentwicklung des Verhältnisses von Slow Food und Gastronomie sowie mit den unterschiedlichen Formen der Unterstützung von Seiten der Gastronomen und beleuchtet dabei vor allem die Wechselbeziehung zwischen wirtschaftlichen und politischen Aspekten, die den Diskurs zwischen beiden Partnern bestimmen. |
