S’appuyant sur deux enquêtes, l’une menée entre 1988 et 1998, l’autre entre 2009 et 2012 dans différents milieux juifs en France et aux États-Unis, l’analyse porte sur l’évolution des pratiques alimentaires, les facteurs de cette évolution et la fonction attribuée aux différents repas et aliments symboliques dans la commémoration des morts. |

The data gathered by two fieldworks, one carried out in France in the Nineties, the second among American and French families between 1999 and 2012 emphasize the evolution of food behaviours, the factors of this evolution and the function of meals and symbolic food in the remembrance of the Dead. |

| Summary, etc. | Die Essen und Trauergewohnheiten in jüdischen Gesellschaften Die Essensgewohnheiten im Rahmen jüdischer Trauerrituale sind Teil der individuellen Trauerbewältigung sowie Teil der kollektiven Eschatologie, die wiederum auf mittelalterlichen und kabbalistischen Vorstellungen gründet. Die vorliegende Analyse, die sich auf zwei Untersuchungen stützt, die zwischen 1988 und 1998 sowie zwischen 2009 und 2012 in verschiedenen jüdischen Milieus in Frankreich und den USA durchgeführt wurden, konzentriert sich auf die Entwicklung der Essenspraktiken, die Faktoren ihrer Entwicklung und die Funktion, die den verschiedenen Mahlzeiten und symbolischen Lebensmitteln bei Gedenkfeiern zugeschrieben wird. |
