| Summary, etc. | RésuméLa restructuration du secteur laitier, particulièrement vigoureuse au cours des 20 dernières années, est généralement attribuée à la nécessité pour les exploitations laitières d’améliorer leur compétitivité. Cette restructuration a pour conséquence un agrandissement continu des exploitations laitières et la diminution, en parallèle, des petites exploitations familiales. Pourtant, de fortes différences territoriales peuvent être observées dans la façon dont se (re) structure le secteur laitier en France. Sur la base d’enquêtes directes conduites dans différents territoires français, à la fois auprès des acteurs économiques, politiques et syndicaux et dans un peu plus de 150 « petites » exploitations laitières, l’article montre que les dynamiques territoriales peuvent pour partie compenser les effets de la restructuration et jouer un rôle déterminant sur la viabilité de ces exploitations. Il montre l’importance de saisir la façon dont les représentations localement partagées se formalisent dans divers processus de développement. Ces représentations concernent à la fois l’avenir possible du secteur laitier et le type d’exploitation apte à être compétitive. En s’incarnant dans diverses règles formelles et organisations, elles contribuent ainsi à la sélection des exploitations. |

| Summary, etc. | Territorial dimensions of the restructuring of the dairy sectorThe restructuring of the dairy sector, particularly active during the last 20 years, is often justified by to the need for dairy farms to increase their competitiveness. This restructuring has resulted in the continued growth in the size of dairy farms and the parallel decline of small family farms. However, we observed that the ways in which this restructuring takes place are markedly variable depending on regional and territorial specificities. Based on surveys conducted in various regions of France with economic, political and agricultural union stakeholders and in over 150 « small » dairy farms, the article shows that differing territorial dynamics can in part compensate for the effects of restructuring and may play a determinant role on the viability of such farms. The paper shows the importance of understanding how locally shared representations of farm viability criteria are formalized in different development processes. These representations concern both the possible future of the dairy sector and the type of farms which are in a position to be competitive, thus contributing to the selection of dairy farms. |
