Summary, etc. Les données collectées lors de cafés participatifs sur les deux terrains de ­­l’étude Biolorec soutenue par ­­l’ADEME (France) et leur analyse grâce à la statistique textuelle ont permis ­­d’identifier les freins et facilitateurs à la mise en place ­­d’une restauration collective de qualité. Entre adhésion consensuelle à une norme sociale et difficultés de mise en œuvre, cette étude permet de mieux comprendre les facteurs de blocage à ­­l’œuvre et le rôle imparti aux politiques publiques dans leur capacité à impacter la structure du marché des produits agroalimentaires et à faire évoluer les représentations et structures des préférences des acteurs et actrices du secteur.

Summary, etc. The data collected during two Participatory Cafés and their conceptual analysis using the IRaMuTeQ software made it possible to identify, in two areas of the Biolorec study, the obstacles and facilitators to the establishment of a Collective Catering (RC) of quality. Between consensual adherence to a social norm and difficulties of implementation, this study provides a better understanding of the blocking factors at work and the role assigned to public policies in their ability to impact the structure of the ­­agri-­­food and to change the representations and structures of the preferences of actors in the sector.
