| Summary, etc. | L’ensemble des Français n’était pas confiné au printemps 2020. Des travailleurs et des travailleuses ont eu le devoir de poursuivre leur activité. Parmi eux, les agents des services vétérinaires ont continué leur activité sur les chaînes de production dans les abattoirs, garantissant l’approvisionnement en viande et produits carnés. Sous l’autorité du ministère de l’Agriculture, ces agents sont plus précisément rattachés aux directions départementales de la protection des populations tout en travaillant au quotidien dans les établissements d’abattage. En nous appuyant sur les apports de la sociologie des organisations, nous proposons dans cet article d’analyser la façon dont ces travailleurs en charge d’une politique régalienne ont dû réinventer leurs façons de travailler alors même que le reste de leur administration se trouvait fragilisée. Les missions essentielles devant être réalisées, la crise bouscule et vient révéler les singularités de l’inspection comme activité d’intermédiation, alors que l’on constate à la fois la fragilisation de la coopération au sein des abattoirs, entre contrôleurs et contrôlés et la fragilisation de la coopération entre donneurs d’ordre et inspecteurs. |

| Summary, etc. | Not all French people were in quarantine at spring of 2020. Some workers had a duty to carry on working. Among them were the veterinary service officers who continued to work on the production lines in slaughterhouses, guaranteeing the supply of meat and meat products. Under the authority of the Ministry of Agriculture, these agents are more precisely attached to the Departmental administration, while working daily in slaughterhouses. Drawing on the contributions of sociology of organisations, this article focuses on how these workers in charge of a regalian policy have had to reinvent their ways of working at a time when the rest of their administration has been weakened. With essential tasks having to be carried out, the crisis has shaken things up and revealed the singularities of inspection as an intermediary activity, at a time when we are seeing both the weakening of cooperation within abattoirs, between inspectors and those being inspected, and the weakening of cooperation between principals and inspectors. |
