Le renouveau des identités régionales a modifié leurs pratiques et celles de la clientèle. Après une période d’oubli, la géographie et le terroir sont de retour même si des équilibres sont encore difficiles à trouver entre les deux systèmes. Le temps des terroirs revient malgré le poids du système-monde, évolution logique dans des pays où les populations se tournent vers la qualité et la variété. |
