Summary, etc. Au xixe siècle, la région de Nolay, à l’extrémité sud de la Côte-d’Or, malgré sa relative exiguïté (115 km² et 8-9 000 habitants), était cependant parfaitement représentative de l’ensemble de la Côte, notamment en ce qu’elle intégrait les trois sous-ensembles qui concouraient à l’activité viticole à cette époque : le Pays-Bas, la Côte et l’Arrière-Côte. C’est la raison pour laquelle nous l’avons choisie pour une étude du monde viticole sur la longue durée, de la fin du xviiie siècle à la veille de la Première Guerre mondiale. Nous souhaitions étudier le monde viticole dans une perspective « d’histoire totale » prenant en compte les activités économiques comme les structures sociales ou les mentalités et sensibilités politiques. De plus, travaillant sur un espace restreint, nous avons pu développer une approche micro-historique et une analyse spatiale. Sur le plan de l’économie viticole, la période est scindée entre une longue période d’expansion qui culmine à la fin des années 1870, interrompue par l’invasion phylloxérique marquant l’entrée dans une crise qui, au-delà de la reconstitution du vignoble, s’est prolongée par de nouveaux fléaux (surproduction structurelle, accidents climatiques, maladies cryptogamiques) jusqu’à la veille de la guerre. Les événements de la Révolution ayant eu l’impact que l’on sait pour la vie du pays, nous avons choisi de traiter le sujet en trois grandes parties : d’abord un état des lieux à la veille de 1789, avec l’essor d’un secteur viticole dynamique aux prises avec les archaïsmes de l’Ancien Régime. Puis nous analyserons la longue expansion jusqu’aux années 1870, en prenant en compte les aléas conjoncturels et les conditions de la croissance. Nous terminerons par la crise multiforme qui frappe la viticulture régionale à partir de l’invasion phylloxérique et se poursuit jusqu’à la guerre.

Summary, etc. In the xixth century, the region of Nolay, at the southern end of the Côte d’Or, despite its relative smallness (115 km² and 8-9,000 inhabitants), was nevertheless perfectly representative of the whole of the Côte, particularly in that it integrated the three sub-areas that contributed to the wine industry at that time: the Netherlands, the Côte and the Arrière-Côte. This is why we chose it for a study of the wine world over the long term, from the end of the 18th century to the eve of the First World War. We wanted to study the wine world from a « total history » perspective, taking into account economic activities as well as social structures, mentalities and political sensibilities. Moreover, working on a restricted space, we were able to develop a micro-historical approach and a spatial analysis. In terms of the wine economy, the period is divided between a long period of expansion which culminated at the end of the 1870s, interrupted by the phylloxera invasion marking the beginning of a crisis which, beyond the reconstitution of the vineyard, was prolonged by new scourges (structural overproduction, climatic accidents, cryptogamic diseases) until the eve of the war. The events of the Revolution having had the impact that we know for the life of the country, we have chosen to treat the subject in three main parts: firstly, an inventory of the situation on the eve of 1789, with the rise of a dynamic wine sector struggling with the archaisms of the Ancien Régime. Then we will analyse the long expansion up to the 1870s, taking into account the cyclical hazards and the conditions of growth. We will end with the multiform crisis that hit the regional viticulture from the phylloxera invasion and continued until the war.
