| Summary, etc. | Pendant la Restauration, quelque 620 Dijonnais sont propriétaires de plus de 900 hectares de vignes dans les communes aux environs de Dijon. Ces avoirs fonciers résultent de stratégies spécifiques à chaque catégorie professionnelle : les élites, les bourgeois et les gens de justice privilégient la Côte de Nuits, les commerçants, les artisans et les exploitants viticoles préférant les communes périphériques. Les vignobles de l’arrière-pays, de moindre revenu, n’intéressent les Dijonnais que de façon sporadique, car la vigne reste avant tout un placement et une source de revenu. |

| Summary, etc. | During the Restoration, some 620 Dijon residents owned more than 900 hectares of vineyards in the communes around Dijon. These land holdings were the result of specific strategies to each professional category: the elites, the bourgeois and the people of justice favoured the Côte de Nuits, while merchants, craftsmen and wine growers preferred the peripheral communes. The vineyards in the hinterland, which had a lower income, were only sporadically of interest to the people of Dijon, as the vineyard remained above all an undeniable source of profit. |
