| Summary, etc. | À la suite des objectifs ambitieux fixés par le « Grenelle de l’environnement », les acteurs des territoires se sont organisés autour des enjeux de reterritorialisation et d’écologisation de l’alimentation à destination de la restauration collective. Cependant, ils n’ont souvent retenu qu’un aspect, entre l’agriculture biologique et le local, entretenant une confusion qui permet à chacun de se positionner. La recherche présentée ici porte sur les initiatives sarthoises de fourniture de produits locaux et de qualité à la restauration collective depuis la fin des années 2000 ; elle met en évidence les jeux d’acteurs et les rapports de force non seulement entre ville et campagne mais aussi entre des formes d’agricultures dont les qualités et les proximités sont à géométrie variable. Parmi ces initiatives, un projet ambitieux de fourniture de légumes bio locaux a retenu notre attention dans la mesure où il éclaire comment les autres acteurs du territoire se sont positionnés, selon un gradient proximité-qualité. Après une première partie qui présente les différentes facettes de l’engouement porté à ces pratiques, la deuxième partie analyse dans le cas du département de la Sarthe comment des volontés pionnières territoriales en faveur de l’agriculture biologique locale ont finalement abouti à des concrétisations peu exigeantes. Une discussion conclut l’article sur la difficulté d’activation des quatre dimensions de la proximité dans cette initiative. |

| Summary, etc. | Following ambitious objectives set by the 'Grenelle Agreement on Environment', local stakeholders have organised the shortening and greening of food chains that supply public catering. However, they have often kept only one side of the objectives, either local or ecological, creating confusion but allowing a wider space to take position. Socially accepted and politically booming, local food supply chains have stimulated much talking and writing but have not always been turned into reality. This paper deals with a case study in western France, around Le Mans, where several initiatives were taken to supply public catering with local high quality products in the 2000s. It highlights actors’ interactions : and the balance of power between urban and rural sectors but also between forms of agriculture whose qualities and locations vary greatly. We focus especially on one of these initiatives : an ambitious project of local organic vegetable supply, in the way that this project sheds light on the positions of other stakeholders within the same territory. First, the growing institutional and scientific interests in local supply chains are presented. Second, the Sarthe case study analysis shows how a fully relevant project gave birth only to scattered and pale copies of what was intended. This leads to a discussion about the difficulties of achieving full dimension proximity. |
