| Summary, etc. | This article examines the views and practices of company managers in the hotel and catering sector on their use of short-term contracts and the variety of ways in which they are used in different sub-sectors (traditional restaurants, fast-food outlets, bars, hotels, caterers, collective catering). The hotel and catering sector is often mentioned in public debates regarding their intensive use of short-term contracts of less than one month, without the corresponding recruitment practices being explained or detailed. This article is based on the hypothesis that the explanation of the use of short-term contracts is incomplete when based solely on a « sector effect » which would envisage a community of behaviors in terms of human resources management, but without considering the intrinsic characteristics of the organizations as well as the careers of their managers. To this end, we propose a typology based on 51 interviews with managers and recruiters in the hotel and catering sector, thus highlighting the diversity of uses of contracts of less than one month that are part of the strategies of these companies. |

| Summary, etc. | Cet article interroge le point de vue des dirigeant·es d’entreprises de l’hôtellerie-restauration sur leurs usages des contrats courts ainsi que leurs pratiques en la matière. Il interroge également la variété des modes de recours dans les différents sous-secteurs d’activité (restaurants traditionnels, fast-foods, bars, hôtels, traiteurs, restauration collective). Régulièrement mentionné dans les débats publics à propos des contrats à durée déterminée (CDD) de moins d’un mois, le secteur de l’hôtellerie-restauration est souvent pointé du doigt sans que soient pour autant détaillées les pratiques de recrutement correspondantes. Cet article part de l’hypothèse d’une incomplétude de l’explication du recours aux CDD courts. Cette dernière s’appuierait uniquement sur un « effet secteur » qui considère que les comportements en matière de gestion des ressources humaines sont partout les mêmes, mais qui ne prend pas en compte les caractéristiques intrinsèques des organisations ainsi que les parcours de leurs dirigeant·es. Pour compléter et enrichir l’explication, nous proposons une typologie établie à partir de 51 entretiens auprès de patron·nes et recruteur·ses du secteur de l’hôtellerie-restauration, et mettons ainsi en lumière une diversité d’usages des contrats de moins d’un mois qui s’inscrivent dans les stratégies de ces entreprises. |
