This paper describes some aspects of the globalization context with which agro-food systems have had to deal since the beginning of the 1980s. Globalization is seen here as a social process of the extension of free trade at the international level. The paper emphasizes two main figures in this process: the building of large free-trade areas such as Mercosur and the European Union, and the rise of global standards. © 2007 Lavoisier, Paris.
