Both buyer and purchasing advisor, the sommelier interacts with those who manufacture and supply wine but also with peers, employers, customers… As such, he or she occupies the position of mediator actively involved in the manufacture of taste as it relates to wine production. Based mainly on a series of interviews, this article shows that the taste-makers themselves are largely conditioned by the context in which they practice and, more fundamentally, by the catering and wine economies.
