Of all types of food and drink, wine undoubtedly offers the broadest landscape for representation and figuration. With wine, everything has meaning, a power of significance and representation: of the land, of climate, of the vineyard, of the vintner’s work, bottles and labels, tables set for communal meals, conviviality: wine offers a whole world of signs and imagery that cause us to savor and to value the emotions we derive from taste. These emotions derive from the senses, but also from an expertise that has been codified into descriptive norms and matrices, into categories that have come into common use whenever the question of wine-tasting arises. Far beyond sensory experience alone, wine deploys a world of sensibility through the many figurative dimensions touched on above. Through the sensibility of words, moments and emotions, the senses are able to project a richly imaginative world of representations. This relationship is embodied in the quest for experiences relating to wine, a desire to incorporate and appropriate everything it signifies. And these sensations are now being amplified by new techniques for immersion in the synesthetic and symbolic world of wine.
