The methods of analyzing practices, which have a prescriptive and evaluative aim, are increasing at present, particularly in healthcare jobs. In the professional world, these processes consist in participating, in the definition and the promotion of “good practices,” through the writing of guides and reference tables. Based on an intervention using the method of the interviews in autoconfrontation crossed with physiotherapists, this paper shows that the analysis of working activities can, under certain methodological conditions, be the opportunity for professional groups to reassess their work and its description. Reference tables, now classical tools in vocational and management training, can facilitate this process. In order for this to occur, these reference tables have to abandon the description of what is made or of what has to be made; they must integrate the indecisive elements of work and the historic dilemmas of job. Lastly, this paper presents an excerpt of an interview between two professionals where one of these dilemmas manifests in the activity of language.
