Determinants of food consumption in Brazzaville

This article aims to analyze the determinants of food choice and food consumption in Brazzaville, Congo, where about 75% of food products are imported. This research was conducted using a mixed methodology and surveyed 135 participants, selected using purposive and simple random sampling methods. The results of this research reveal an emergence of urban kitchens in Brazzaville due to the insufficient availability of local food products and the diversity of urban cuisine in Brazzaville. The contingency table presented shows a link between purchasing power and the consumption of breakfast and lunch, with the Chi-square test indicating significance of 1%. In addition, an analysis of the variation in menus found four categories of reasons for opting for a certain cuisine: nutritional benefits, discovering the art of cooking, taste, and, finally, well-being.
