N1 - 21 N2 - This paper aims to describe the decision-making and value creation process of a social entrepreneur who works in organic food and with short supply chains. First of all, we conduct a quick review of economic and social value models to show that even though they might be convergent, they have not been integrated into a global model that allows us to perceive and provide an account of project complexity. In the second part, we describe the case we have studied, finishing up with a discussion on how value for local development is created. Through an action research methodology, we have observed that stakeholders get involved in the project because of the coherence of its global value (economic, social, and ethical dimensions).
