Each wave of migration brought expertise and techniques that contributed to the creation of a product, namely out-of-season fresh oranges. We follow the thread of migrations in order to present the development of the fresh orange, from the arrival of Christopher Columbus to that of “pieds noirs” in 1962, as different populations planted, developed, and invented the concept of “out of season” in order to build their legitimacy in the agricultural space. © 2007 Lavoisier, Paris.
