Studying a cattle-finishing business in eighteenth-century Brionnais - 2023.

It is rarely possible to observe a cattle finishing business at the the farm level. This is what can be achieved through the analysis of the account book of the Noue company, in the parish of Saint-Julien-de-Civry, in Brionnais, the birthplace of the Charolais breed of cattle. This document, which recorded the purchases and sales of oxen over the period 1743-1778, allows us to observe the daily activity of the business, to reconstruct the lean cattle supply networks, the fat cattle sales networks and to evaluate the earnings that the activity generated.
