Cet article examine le processus de patrimonialisation d’un produit de la tradition toscane?: le haricot zolfino. Les catégories du patrimoine et de l’authenticité sont ici définies respectivement comme l’espace de mise en action des politiques d’en haut et comme instrument légitimant les acteurs du patrimoine – médiateurs, institutions et réseaux locaux – dans la construction de la plus?value du produit. Le processus de patrimonialisation du zolfino, bien pauvre devenu bien d’excellence, est l’objet de nombreux conflits.

This article focuses on the food heritage processes of a Tuscan traditional product: the zolfino bean. Categories of heritage and authenticity are here defined, the former as the space for activating top?down politics and the latter as the tool legitimizing the heritage actors in the construction of the product’s plus?values —experts, institutions and local networks—. The zolfino heritage process triggers a conflictual and strategic re?writing of the community history, where the parameter of authenticity defines the borders of production according to the varying interests involved.

Der Beitrag beschäftigt sich am Beispiel der Zolfino?Bohne mit der Vergabe von regionalen Gütesiegeln für Produkte toskanischer Herkunft. Man sieht: Die Vergabekriterien sind abhängig von politischen Entscheidungen sowie vom Einfluss bestimmter Mediatoren, Institutionen oder lokalen Netzwerken, die letztlich den Mehrwert des Produktes konstruieren.
