À partir d’une démarche ethnographique centrée sur l’alimentation, cet article pose à nouveaux frais la question de la participation des personnes âgées dites dépendantes vivant en institution. Il analyse à la fois la participation telle qu’elle est recommandée dans les politiques de santé publiques et telle qu’elle est concrétisée dans les établissements. Il montre comment la lutte contre la dénutrition rend difficile la compréhension du refus alimentaire comme un acte délibéré et participatif de la part des résidents.
