520 _aThis paper renews the economic analysis of French AOC ( appellation d’origine contrôlée) vineyards. From an institutional perspective, we show that these vineyards connect various geophysical territory and an institutional territory, that is, a set of institutions covering the territory that constitutes the vineyards, including the AOC label. The economic performance of the vineyard therefore depends on the degree of institutional proximity between the agents that entail a high-quality relationship between these two dimensions of vineyards. The case of the Cahors AOC makes it possible to conduct a field-specific study based on our analytical framework.
