| 520 | _aBien que s’appuyant principalement sur les secteurs traditionnels, le renouveau industriel lyonnais du premier XIXème siècle prend également sa source dans l’affirmation d’activités nouvelles émergeant du magma artisanal urbain. Parmi celles-ci, les brasseries occupent une place de choix. Porté par de nombreux entrepreneurs ambitieux et marqué par l’augmentation de la consommation de bière, d’importants progrès scientifiques et techniques, ou encore le développement de compétences professionnelles spécifiques, ce secteur témoigne en effet à Lyon d’un important dynamisme au cours du siècle.En interrogeant l’activité brassicole locale, nous chercherons donc à évaluer la place occupée par celle-ci dans le processus d’industrialisation de la métropole rhodanienne. Parallèlement, nous démontrerons dans quelles mesures certains brasseurs, par leur capacité d’innovation, peuvent être considérés comme des entrepreneurs. | ||
| 520 | _aEven though mainly based on traditional business sectors, the industrial revival from the early nineteenth century originates in Lyon in the assertion of new sectors as well. Among those, appearing from a thick urban handcraft network and supported by many ambitious businessmen, the breweries hold a central position. Thus, characterized by the increase of beer consumption, substantial scientific and technical improvements, as well as the development of specific professional skills, this sector demonstrates an important dynamism during the century.Through examining the local brewing activity, we will estimate the part played by it in the industrialization process of the city.
