| 520 | _aRésuméLa production de « veau blanc » pour la boucherie parisienne en Pays d’Auge, a perdu de l’importance au début du xviiie siècle, se déplaçant vers l’Île-de-France. Le « veau de Pontoise » devint une activité rémunératrice pour les agriculteurs du Vexin : ils élevaient des vaches normandes et importaient des jeunes veaux d’une à deux semaines pour les engraisser. En 1839 avec l’arrivée du chemin de fer à Saint-Germain-en-Laye, les agriculteurs vendent à des prix plus avantageux leur lait en nature et la production vitelline périclite au profit du Gâtinais et de la Brie. La réputation du « veau du Gâtinais » va en croissant. Vers 1870, cette activité diminue, également en raison du chemin de fer. Dès la fin du xixe siècle, la production de « veau blanc » se déplace vers la Champagne : aujourd’hui, elle a disparu de la Région parisienne. | ||
| 520 | _aThe raising of « white calves » for Paris butchers lost its prominent place in the Pays d’Auge at the beginning of the 18th century, moving to the Paris area itself. The « Pontoise calf » became a profitable activity of farmers in the Vexin ; they raised Normandy cows, and bought and fattened young calves one or two weeks old. When the rail line to Saint-Germain-en-Laye was opened in 1839, farmers started to get better prices for their raw milk, and calf raising went into decline, moving out to the Gâtinais and Brie areas. The fame of the « Gâtinais calf » grew, but around 1870 its production was also declining again because of the arrival of railroads. As early as the end of the 19th century, the raising of « white calves » had moved toward Champagne ; today this type of activity has entirely disappeared from the Paris area. | ||
