Dans les cuisines en arrière‑scène de l’utopie cosmopolite made in China, on découvre alors un espace social traversé de tensions, de controverses, de frustrations, d’incertitudes et de négociations serrées qui peuplent le quotidien de ce vaste laboratoire de la mondialisation.

It highlights the specific practicalities of managing in a restaurant in the context of an international event of exceptional scale (the first universal exhibition ever held in China) where the whole range of activities of restaurateurs was constantly subjected to a hefty framework of regulations, controls and daily inspections. In the backstage kitchens of this cosmopolitan utopia made in China, one unveils a social space rife with tensions, controversies, frustrations, uncertainties, and tough negotiations that interspersed the daily life of this vast laboratory of globalization.
520			_aDer Artikel beschäftigt sich mit den Erfahrungen der Restaurantchefs in den einzelnen Länderpavillons auf der Expo in Shanghai 2010. Er beleuchtet u.a. die pragmatischen Besonderheiten, die sich im Rahmen dieses einzigartigen internationalen Ereignisses, der ersten chinesischen Weltausstellung, in den Restaurants der Expo etabliert haben, die mit extrem restriktiven Regeln, Auflagen und täglichen Kontrollen zu kämpfen hatten. Hinter den Kulissen der weltoffenen Made‑in‑China‑Utopie konnte man dabei einen extrem angespannten sozialen Raum entdecken, der bestimmt war von Frustration, Unsicherheit und ständigem Aushandeln jeder Kleinigkeit des riesigen Labors der Globalisierung.
