520 _aBased on the theory of planned behavior, the objective of this research was to develop a framework for analyzing the determinants of older adults’ intention to purchase organic food. A conceptual model was developed following the literature review. A qualitative study conducted among sixteen older adults validated the choice of model variables. It was followed by a quantitative study conducted among two hundred older adults, which confirmed the conceptual model using the structural equations method. The impact of all the variables of the planned theory was thus validated and two new variables were identified: “concern for food safety,” which impacts purchasing intention, and “concern for health,” which impacts attitude.
